MAMEY BY NIVEN PATEL NOW OPEN AT THIS HOTEL MIAMI

A member of Food & Wine magazine’s “Best New Chefs” class of 2020 and a James Beard Award nominated chef Niven Patel added a new one Restaurant to its outstanding Aya hospitality lineup (Ghee, Erba) Mamey with the eagerly awaited THēsis Hotel St John in Coral Gables. The renowned chef, who is the first to bring two concepts to market, cooks in the new hotel. Mamey, open August 2020. The lively and island-oriented concept includes an entertaining cocktail program from St John’s respected collective Bar Lab. Inspired by Patel’s travels through Asia, Polynesia and the Caribbean, Mamey derives its name from the unique fruit and displays the exotic flavors and spices that are common in tropical cuisine. Patel will unveil at the end of 2020 Or no. The modern restaurant in the neighborhood focuses on first-class ingredients and wood cuisine, classic cocktails and a carefully crafted wine list.

Arguably one of the most important and forward-looking chefs and restaurateurs in South Florida (he was named one of the “Best New Chefs” in the country by Food & Wine last May), Patel brings an authentic and organic approach to everything he does. In fact, Patel sources a lot of fruits, vegetables and herbs for his restaurants Rancho Patel, his two acre farm in Homestead. This commitment to sustainability and mindful sourcing is Patel’s leitmotif and has helped define his eclectic style of cooking, which is deeply rooted in his heritage while also drawing inspiration from the rich abundance of the region. “The connection between the plants, the farm, the harvest and the food on the plate is so important to me and the soul of everything we do in Ghee and Erba that we will do it in Mamey and Orno,” notes Patel. “THēsis’ desire to create restaurants that reflect this approach was a factor in my decision to partner. Working with a hotel is a new beginning for me, but I am very happy about it. This partnership promises great things for Aya Hospitality, our future guests and regulars. “

Mamey only serves dinner seven nights a week. Additional meal times, including lunch, which always play a large role in Coral Gables, will be introduced later. Mamey’s menu offers a selection of tasteful small plates including Ghee roasted plantains with spice cream, tamarind chutney, baby tomatoes, pickled onions and herbs; Glazed ribs of lamb with local honey, spring onions and pickled star fruits; Yellowfin Tostones with tomato sofrito, spring onions and piquillo pepper aioli; Bahamian Conch Fritters served with coriander tartare sauce and roasted paprika; Corn & callaloo empanadas;; Vietnamese Caesar Salad with opal basil, Parmigiano, crispy shallots, sesame, anchovy croutons; Mushroom summer roll;; and Mojo roasted pork cheek including rice and peas, thyme and pickled onions.

Lively flavors from a variety of cultures can be seen on the restaurant’s large plates Lemongrass glazed grouper with forbidden rice; Island Spiced Pork Chop with sweet potatoes and mamey butter; Trini Spiced Heirloom Cauliflower with roasted calabaza, chickpeas, coriander pesto and almonds; and Pork belly fried rice with farmer’s egg, Brussels sprouts, pineapple, heirloom carrots and Thai basil. In collaboration with Bar Lab, Mamey’s cocktail menu is bursting with fresh, tasty preparations with an island flair. The delicious libations include the Mamey Swizzle, a tempting blend of coconut fat, washed, flavored rum, shaken with the chef’s chai tea blend, local mamey, oat milk, and bitters; the Jerk Margarita – Mezcal, fresh watermelon, jerked pomegranate, lemon balm and citrus fruits and Que banana – Banana gin, tiki spice, allspice dram and lime juice.

Mamey is located in Coral Gables and is the first restaurant on the Paseo de la Riviera. It serves as a hub for those who live just a few steps from the residences in Thēsis. The Mamey is open to indoor seating with a 50% capacity and also has outdoor seating as well as a pool deck on the 3rd floor with great views of the city.
